It needs to have the right balance between rough and smooth, fit nicely in the hand, and be easy to use. This one designed by Makoto Koizumi has all the features I was looking for, plus ones I didn't know I was looking for! A series of fine lines in a flower-like pattern (the traditional kushi-no-me) forms the texture against which the pestle grinds ingredients to a paste. The wooden pestle is comfortable to hold, and has both a rounded and blunt end for grinding vs. crushing. Such a great kitchen tool that you will constantly reach for!
