We knew immediately we needed to carry them – not just to share with clients, but also to have an endless supply for ourselves! They are hand made by one man, who produces them in a traditional way, before food companies started to use big factory machines. He first makes the mochi rice cakes in a stone mortar with a wood pestle. Then he cuts the mochi into thin slices and lets them dry in the sun and air.
